What’s one of our favourite summer classics? Soft-serve coffee ice cream sundaes! All you need to create this dreamy dessert is ice cream, your favourite toppings and coffee!

We have provided two variations for homemade caffeinated soft serve that will impress your friends and family as they relax by the pool or after returning from a long bike ride!

Both recipes are made with espresso, and we recommend choosing your favourite espresso blend. Any of them would be delicious in these two recipes, from Cremone to Venezia, Bio Due to Autentico!


Chocolate, Coffee, Cookie and Caramel Soft Serve

Ingredients (makes two servings)

  • 3 cups chocolate ice cream

  • 2 tsp ground espresso for espresso machines

  • 1/2 cup mix-ins: chocolate chip cookie pieces and coarsely chopped peanuts

  • Several broken cookie pieces, peanuts, and creamy caramel for the toppings

For the mix-ins and toppings, we chose cookies, peanuts and caramel, but you can go with whatever you feel like in the moment! Brownie pieces, chocolate shavings, crushed shortbread cookies, candied nuts, etc. Get creative with it!


Directions

  1. Put the chocolate ice cream and ground espresso into a large bowl.

  2. Mix the ice cream and ground espresso for thirty seconds using a hand mixer. The ice cream consistency should be smoother and soft, but it should still be a good consistency.

  3. Add the mix-ins to the softened ice cream and use a spatula to mix.

  4. Divide the mixture into two large glasses and top with cookies pieces and some peanuts.

  5. Drizzle some espresso caramel on top before serving.

All that’s left now is to enjoy!


Espresso, Oreo, and Dark Chocolate Soft Serve

Ingredients (makes two servings)

  • 4 cups vanilla ice cream

  • 1 short single espresso (1 oz.), chilled

  • 1/2 cup Oreo cookie pieces

  • Dark chocolate shavings for the topping

Directions

  1. Put the vanilla ice cream into a large bowl and pour in the chilled short single espresso.

  2. Mix the ice cream and espresso for thirty seconds with a hand mixer.

  3. Add the Oreo pieces and mix it all together using a spatula.

  4. Divide the mixture into large glasses and top with some cookie pieces and dark chocolate shavings.
